Pacman will automatically try to upgrade you to GNOME3 if you do a
system upgrade. However, a command like
sudo pacman -Syu --ignoregroup gnome,gnome-extra
should ignore all GNOME-related packages while still upgrading the rest
of your system. Your mileage may vary, however, as this could eventually
lead to breackage as older GNOME packages become incompatible with newer
system libs. For now it should work quite well.
