If you close Evolution and uninstall the package evolution, Evolution
related processes are not necessarily stopped from running. You might
try to delete opened files.
Juts for testing purpose add a new user and run Evolution there.
Maybe you misunderstand that uninstalling the evolution package doesn't
uninstall the evolution-data-server package, since evolution is just a
suggested dependency of evolution-data-server.
