Just a random thought here:  Could it be that the absurdity of
html email pushed on people by Microsoft et al might be part of
the reason why so many people now prefer texting to using email,
as it gives them (without their realizing it) many of the benefits
of plain text email and a little pushback against the big email
vendors?

I think it's a lot more complicated than that. I deal with the yoof all
the time and my impression is that they see email as being the more
formal end of the communication spectrum - you get emails from teachers
and lecturers and the bank, you get messages from your friends. Text
(i.e. SMS) is very last century - most people use some other form of
instant messaging - Snapchat, FB messenger, WhatsApp and so on - they
don't really care which one, they aren't loyal and they often use all
of them at the same time. And they often use richtext enhancements -
emoji, photos, gifs, avatars, fonts, colours etc. So it's not that they
want plain text, they want something quick and reliable to have real-
time conversations on their phone. Email just doesn't work well in that
environment.
