There indeed is an Ubuntu flavor based on GNOME available.

But Evolution is version 3.18.5.2 and maybe not installed as the
default MUA on the live media.

Arch Linux always provides the current version from upstream, mabe with
one or two days delay.

[rocketmouse archlinux ~]$ pacman -Q evolution
evolution 3.20.2-1

But getting a live media for this user-centric rolling release model
distro is not that easy as getting a live media from a user-friendly
release model distro.

Arch based distros most likely don't come with GNOME by default.
