When I first came to gnome 3, I think some of those options were not
shown in the menu under my name. I used a package called
gnome-tweak-tool to enable these. That was some time ago so I might
have this wrong.

One thing I did do with gnome-tweak-tool was to re-enable the desktop
and I could specify what to show on the desktop. Frankly, I dislike
the GNOME folks deciding for us how to use the environment. I find it
much easier to open up my documents folder from the desktop instead of
messing around in the Dash. I am personally not impressed with the
dash under gnome 3.

Under that is the menu with your name, which should say "collapsed."
Pressing the right arrow one time expanded the menu and took me to the
log out option. Note that if you think of this as an expanded tree and
hit the down arrow, you will end up below the menu where the settings,
lock and power off buttons are. Once you hear "log out," press enter,
and you will hear a log out button. You can press either enter or space
there, and you will be logged out of your user account. Hope this helps.
