If I import it into my regular mail account the import fails. So the
issue looks to be communication between Courier and Evolution.

I suppose you initially received the message through IMAP. Could you
find the message in the local cache, please? It might look
differently
than the one you sent me privately. You can find it under:
   ~/.cache/evolution/mail/<imap-account-uid>/folders/.....
I'd search the files for something unique, like the message ID header
value, which contains "20180927174114.0DEFF2027154@" (quotes for
clarity only) in the message you sent me.

I've some ancient versions of IMAP servers and I tried the message
there, by drag&dropping the test message from an On This Computer
folder to the respective account folder and this is the result:
both dovecot 2.2.18 and courier 0.75.0 show the message properly,
cyrus
2.4.17 replaced those Unicode letters with XXXX and XXXXXX
respectively. Thus in case of Cyrus it was the server decision, not
the
client decision. My versions are very ancient, maybe your (I suppose)
more recent Courier also does some modifications to the message, as
you
suggested.

In this case the message does not make it into local cache. Courier
finds some error when it communicates with Evolution and sends a
"placeholder" (don't ask me for more details - I am not familiar with
the code!). I feel sure that if it had, it would display correctly just
like the local copy in "On My Computer".

Not sure what's changed between Courier 0.75 and 1.0 - but one of the
features of the Courier 1.0 release was implementing Unicode email...
