If it wasn't using Bonobo, it would need to use something else to handle
activation and communication with the gnome-vfs-daemon.
The gnome-vfs-daemon is needed to monitor volume mounts and unmounts
(which includes asking apps to drop FAM watches on a volume before
unmounting so the volume can actually be unmounted), and handling of VFS
methods that would be expensive to run in each individual client.
These bits could be done without Bonobo, but you would just be switching
one IPC/activation system for another.
