Last stable release (2.2.0) builds against gtk+-2.0, Ubuntu provides
it (like everyone else). You can check banshee page[1] on launchpad.

Banshee has several backends, one of them is the banshee-gnome
backend, and currently it only supports GTK2. You don't need to worry
about this because a lot of packages/gnome apps don't support GTK3
yet. Transmission is one of those cases, but there are more.
