That was how I originally felt, but I think it might confuse people if
it dynamically filters while typing. 

Firstly, users expect the environment to change only when the "search"
button is activated. Some users might be confused be the
over-reactiveness and lack of control.

Secondly there could be other benefits of delaying the search until
commanded specifically; for example (and this isn't very exciting)
perhaps a user wants to perform a search based on some content within an
open email. As soon as the user starts typing, the automatic filtering
would cut in and prevent the user from finishing. There are likely other
situations as well :)
