My guess is that either Thunderbird isn't sending aproperty-change::accessible-name event when the name changes or there is abug in AT-SPI2 somewhere. AT-SPI2 will use the name that it has cached(there is an API to control what gets cached, intended to work around bugswhere an application or toolkit doesn't send an event, but it isn't reallytested and is probably buggy right now.)
