I think this will be virtually impossible at the moment. You will need to
setup the development environment on OS X, which is a big mess and has
custom patches applied. We hopefully improve the situation a bit with gedit
3.0, but it will still be quite hard to compile anything. I could try to
make a dev dmg for OS X that includes all the required development files.
In my own reply to this thread I showed how I managed to compile my plugin.

In a nutshell, using CFLAGS="-arch i386" and
--prefix=/Applications/gedit.app/Contents/Resources made it possible
for my plugin.
OK great. Note however that there could be changes between the native version and the x11 version which might cause improper compilation and linking when used with the native version. Of course, if it works, it works, but I would still like to see if I can provide a development package in the future. Thanks for your explanation though!
