my plugin for the X11 version and load it too but I don't know how to
proceed to compile and load the plugin for the native version.

I think this will be virtually impossible at the moment. You will need
to setup the development environment on OS X, which is a big mess and
has custom patches applied. We hopefully improve the situation a bit
with gedit 3.0, but it will still be quite hard to compile anything. I
could try to make a dev dmg for OS X that includes all the required
development files.
