When you open a New message the To: header is usually empty, so it
doesn't know who you are going to write to, so it is unable to provide
the right default account.

You seem to be opening it from the contacts view so that it's already
prefilled? I'm not seeing that option here, but as you seem to have
that, I think it would make sense as a feature to support account
overrides in that case as well.
