        Hi,
the Flatpak (it is spelled differently) and the host system
installation can co-exist, but they do not share any
data/configuration/whatever. The Flatpak version can replace related
.desktop files, thus when running from GUI you can have ran Flatpak
version instead of host system version, but using command line you can
run whichever version you prefer.

Whether uninstall of a Flatpak application removes also the application
data I do not know, it's a question for the Flatpak developers (or you
can just try it). The data is stored in ~/.var/app/org.gnome.Evolution/.

With respect of your printing question, it's a limitation on WebKitGTK+
side [1]. You can print to file, save it to the host machine and print
the file from there; as a workaround.

Flatpak itself has many other limitations, you may notice some of them
sooner or later. It's a price of the security (and the sandbox model).
On the other hand, you can use the latest software without a fair of
breaking your (possibly older) system.
