I've never used the flatpak version of Evolution. However I'd guess
it's highly likely that account and configuration information would
be
preserved, as this is stored in your home directory and not as part
of
the Evolution installation itself.

I hope I'm replying in the correct place:-)

I went to backup Evolution data in the edit menu (Flatpak) and then
installed the supported version, opened the app and then to Restore
Evolution data in the edit menu I then checked that it was
working/printing correctly and then removed the old Flatpak version. 
All good but one question to come in a new thread
