After reading the above, since Debian/Ubuntu split the upstream bundles
into many packages, take a look at the Debian (and Ubuntu) tracker, to
see what Evolution related packages actually need to be replaced:

PS: FWIW I suspect that evolution and evolution-data-server debugging
symbol packages likely have got hard dependencies to related evolution
debugging symbol packages ;), but you never know. I suspect the only
exceptions are the spam filter packages. IOW you most likely just need
to replace the two packages, the rest should be replaced automagically.
