What is that desktop environment, please?

The problem appears under the default 18.04 LTS ubuntu environment
(gnome-shell).

Do you have installed more of those? [1]
Yes, I did in the past. I installed some, and remove some - see bellow.
To test them, I installed additional environements using "sudo apt
install" command, and I removed using "apt-get remove --purge" command.
* Additional environment installed and removed: lxqt-core, openbox
* Additional environment still installed: xubuntu-desktop, gnome-
session-flashback

First of all, install packages with debug information for evolution-
data-server and evolution.

Humm ... "with debug information for", I'm not sure to understand.
'evolution-data-server' and 'evolution' packages are installed. Schould
I install some more ?

Then open a text terminal, .../... run this command:
$ sleep 15 && gdb --batch --ex "t a a bt" -pid=`pidof evolution`
&>bt.txt
.../... start Evolution

bt.txt return content is only this: "Illegal process-id: pidof
evolution."

By the way, in what way the mouse is frozen, please?
Can you move with the mouse cursor,
Yes, I can move it

only clicks are ignored,
Yes + the mouse cursor is not a tray, but stays as a 'I'

or the cursor is also stuck?
No it is not stuck.
