I think I got some additional insights: It is the EWS connector, or our
version of Exchange.
Like Patrick I thought you said you were using IMAP - but I see that
you said you were using IMAP with Thunderbird. Â You really can't
compare IMAP and EWS - totally different things even within Evolution.
There are other reports of it happening with Exchange - see for
instanceÂ
 https://mail.gnome.org/archives/evolution-list/2015-January/msg00117.html
But there doesn't seem to have been a resolution. Â I strongly suspect
that it's something that Exchange is doing - there's probably some
configuration option that does it but you would need to talk to an
Exchange expert.
One thought. Â Are you sending to people on the same Exchange server? Is
there a difference between what they see and what external people see?
I know that there are settings in Exchange to *override* what the user
sets when sending to remote domains. You could try to start looking at
something like this MS Technet document:
 https://technet.microsoft.com/en-gb/library/jj966211(v=exchg.150).aspx
But you may need to do a lot more searching in the MS documentation.

Yes, this is a problem with Exchange. Exchange strips away the html part when using Exhange as an SMTP server
and sending to external users. I think
there is a registry setting that can be changed to fix this but I never bothered to use much time to
investigate. I solved it by using my own SMTP
server when sending emails from my Exchange account...
