I resorted to manually overriding it
$ gvfs-mime --set x-scheme-handler/http firefox.desktop
Set firefox.desktop as the default for x-scheme-handler/http
$ gvfs-mime --set x-scheme-handler/https firefox.desktop
Set firefox.desktop as the default for x-scheme-handler/https
Although I'm not terribly happy about it, it works.

to https://help.gnome.org/users/gnome-help/stable/net-default-browser
If that page is incorrect a bug report is welcome.
That page is correct. However, it's targeted at running Gnome
applications inside Gnome. I'm running a Gnome application inside KDE.
I noticed the same behaviour with Eclipse after starting this thread.
