$ gvfs-mime --query x-scheme-handler/http
Default application for 'x-scheme-handler/http': google-chrome.desktop
Registered applications:
google-chrome.desktop
firefox.desktop
Recommended applications:
google-chrome.desktop
firefox.desktop
I resorted to manually overriding it
$ gvfs-mime --set x-scheme-handler/http firefox.desktop
Set firefox.desktop as the default for x-scheme-handler/http
$ gvfs-mime --set x-scheme-handler/https firefox.desktop
Set firefox.desktop as the default for x-scheme-handler/https
Although I'm not terribly happy about it, it works.
https://help.gnome.org/users/evolution/stable/default-browser.html links

If that page is incorrect a bug report is welcome.
