Evolution doesn't really have much to do with it.  It defers entirely to
GtkPrint (or the older GnomePrint in your case), which in turn queries
the CUPS backend.  Evolution basically just launches the standard GNOME
print dialog and then goes about its business.

I'm not as familiar with GnomePrint as GtkPrint.  Only thing I can think
to suggest is to check if you see the missing printers in your CUPS web
frontend (http://localhost:631/).
