Well, there are actually two reasons that I can think of. The first is
if you are using some kind of Bayesian filter, then you want to hold
onto your spam for training and reinforcement purposes. Second, if your
Bayesian filter misfiles a good piece of mail as spam, (Which does
happen occasionally until they are well-trained.) then you want to be
able to retrieve it.
