I'm using fetchmail, procmail (plus a whole buncha extras) to snag my
POP3 stuff and I've been mostly using mbox - works fine - and so does
IMAP, or even if you configure it to grab from your local box as POP3 -
either which. It'll still get grabbed and dumped...

IMO, mbox with imap is the way to go, because it maximizes your ability
to change mail programs with low fuss - so much so that you can run a
bunch of mail programs more or less concurrently, without folder
conversions (EG, evo when you have it, mutt when all you have is Xless
ssh, and maybe that other thing you wanted to try out for a week too).

However, evolution's imap support leaves a bit to be desired...  But I
use it anyway.  That means restarting evo from time to time (at least I
guess the need for restarts is imap-related - anyone know for sure?).
