Would it work to say:

export HOME=/some/other/place ; evolution

This should in principle cause Evo to look in
/some/other/place/evolution.

Another possibility is to symlink /some/other/place/evolution to
~/evolution. Or if the other tree is exported as a filesystem, mount it
to ~/evolution.
