A quick look over the 1.0.1 spec on the SyncML site gives the following as the required mime types for syncing:
Data Type
Content Format
Status
Contact vCard 2.1 MUST
VCard 3.0 SHOULD
Calendar vCalendar 1.0 MUST
iCalendar 2.0 SHOULD
Memos text/plain MUST
Tasks vTodo 1.0 MUST
Email message/rfc822 MUST
message/rfc2822 MUST
message/rfc2045 MUST


The content being embedded directly in the xml.  It appears that you can specify any mime type as the sync data but those are the ones the spec requires/requests.  Looks like a reasonable list at least.  There is also a reference implementation of some of the parts that mostly builds on linux.  I'm looking closer now.
