Threw me the first time, too.

In the new composer window is a new menu - SECURITY - which has SIGN and
ENCRYPT options. Check the one you want, and Evo will ask for your
passphrase before you send the mail.

To decrypt, the message will appear as an icon in the preview pane. Click
it.
