If you typed
orca
instead of
/usr/local/bin/orca
then you started the the version shipped with your distro instead of the one you
built from master.

If instead in your distro orca is started by some service file, I guess that it
has to be modified to start the version  you have built from master.

this was expected. The version stays the same until a new tag appears. You
certainly won't see a commit id as upstream version.

Broken means "something doesn't work as expected". If yes, what?

Further, and unless your you are told that some fix for a bug of which you
suffer has been provided I don't see the point of building from git master.

So this is not a downgrade of Orca shipped in Ubuntu Mate 22.04, but an
