Yes, Wheezy does indeed make a great server.  I use one here at work for
some web applications I use.  I have an installation of Ilias 4.3.0.  I
started out using a very very scaled down version of classic gnome desktop
and gradually brought it up to Gnome shell.  I have the server behind a
firewall and I am the only one who uses it as a workstation from time to
time so the extra packages aren't too big a risk.  You have to be careful
when you install Wheezy so you don't get pulse audio going or you will be
stuck with a silent console which is where I am most of the time I do
anything on it locally.  Reason I still have Squeeze on a home machine is
that I have lots of stuff on it and I am putting off the headache of
carefully updating it to a pulse free Wheezy.  There's nothing I can do with
Wheezy that I can't do with Squeeze on that machine that makes me want to
upgrade it badly enough.

Well, it's not quoted any more but if you've been following this thread,
I've just been trying to follow the advice, admittedly often contradictory
advice, from the people on this list.
Actually, I think if you think about it, it only makes sense to set up a
server in wheezy, not a desktop. My desktop runs squeeze. On the other hand,
while setting up a server in squeeze at this point might not 
exactly be wrong it   would definately be iffy.  I didn't want to set up 
a server in squeeze only to have to reinstall or even risk a dist-upgrade in
a few months. I can probably get by without orca entirely on the server. I
could just use speakup. But as long as I have this wheezy machine here, I
thought I'would see how orca compares between squeeze & wheezy.

There's nothing wrong with setting up a server in wheezy at this point. 
The server doesn't really even need the GUI. And packages like bind9 and
isc-dhcp-server aren't going to have significant bugs at this point.
