When I try to run something like Kate, Kcalculator, etc there is some
sort of error message that comes up on screen and Linux crashes. At
least Orca crashes and I have to reboot the system in order to restore
speech output.

Why would you reboot your system instead of switching to a virtual console,
logging in and working on it from there? If the keyboard won't respond and you
have another machine nearby, you can try to log in over ssh, which would again
give you a shell prompt and you're home.
As I'm running Ubuntu 11.04 and it uses a lot of Gnome
2.x packages, not Gnome 3.x, I'm wondering if that might be the
problem here. Too many dependencies are out of date and somewhere down
the line its crashing the desktop.

You'll certainly need AT-SPI 2 installed and running for this to work; one
reason why QT accessibility has taken so long is that it needs a working
AT-SPI 2 with DBus as the inter-process communication mechanism.
