Yes, pulseaudio is indeed required to run GNOME3. You should still be 
able to allow Wine to bypass it when playing audio games, however. Just 
note that unless you have installed a sound card into your computer, you 
won't be able to have speech with Orca and play an audio game using Wine 
in most cases.
