if you do not want to mess up debian (or ubuntu) you could use checkinstall:

short version:

apt-get install checkinstall (do not know, if it is in the ubuntu repository)

the normal triple jump (./configure, make, make install) is slightly different. Now it is 
./configure
make
checkinstall make install

before you do that with espeak, deinstall the old espeak version.
No guarantee.

ps: checkinstall works with debian (deb), redhat (rpm) and slackware (tgz).
