Not necessarily, depending on how you define it: if Hildon, for
instance, is part of GNOME Mobile, then no, that's software in the
Mobile bundle that isn't on the desktop. There are possibly even better
examples...

I actually prefer "GNOME technologies" rather than "GNOME desktop

That seems to merge these together in an unnecessarily confusing way:
1. GNOME Mobile is a set of GNOME software for mobile devices.
2. GNOME Mobile is a group of companies and individuals who use GNOME
software on mobile devices.
Personally, I'd add say "The GNOME Mobile community" or suchlike when
that's what we mean, to make 2. clearer.
