The other apps I was thinking of were Epiphany and Evince. They both
use find bars very similar to the Firefox one, but that close when the
find bar loses focus. This model feels cleaner to me, but then that's
at least partially because I'm used to it.

Again, I was just looking at the Evince/Epiphany strings, which are:
Find (no accelerator), Find Previous, Find Next, _Case sensitive.

I think that the accelerator on "Next" at least is unnecessary, since
it is already activated by Ctrl+G. The others all look good, with the
only tricky one being the entry label. _Search works pretty well
though; another option would be F_ind. As a side note here, in
Epiphany you can refocus the find entry by pressing Ctrl+F again,
which works pretty well.

The status label approach from epiphany/firefox where they pack a
label at the end of the bar seems nice and simple.
