Speaking as someone who's been doing the visa stuff for DebConf (also in
the UK this year), all instructions we've got from embassies/officials/
government websites have agreed with this: you need to an original copy
of a signed letter to be posted out to the person, which they then
include in their application.  You should write as a company (not just
an individual organiser).

You can either supply a simple invitation letter, or where you are
giving financial support, a sponsorship letter which states the support
you will give.  As a company you should *not* need to supply financial
documents for the UK part of the process, even if supplying a
sponsorship letter.  (The applicant should still provide these
themselves if they will be paying for anything.  The most important part
of the process is not your letter, but the applicant demonstrating that
they have a reason to return home: normally that they have a continuing
job there, or that they are a student there.)  I can supply someone with
the text we have been using in our letters if that's helpful.
