Perhaps there is a typo in the initial comments of
"gtk-osx-build/gtk-osx-build-setup.sh":
# jhbuild bootstrap
# jhbuild build meta-gtk-osx-bootstrap
# jhbuild build
to replace by
# jhbuild bootstrap
# jhbuild build meta-gtk-osx-bootstrap
# jhbuild build meta-gtk-osx-core
