However, laziness leaves me with the 1.10.1 package that
came with Ubuntu 10,04 LTS.


The situation was improved after the version you have:

2010-03-23  Morten Welinder  <terra gnome org>

        * src/wbc-gtk.c (cb_paned_size_allocate): Improve handling of
        too-narrow windows.  Show more tabs for wide windows.

That change made it into Gnumeric 1.10.2
