To do it just for the compile you need to 

export
GNOME_PATH=/path/to/dir/with/gnome-config;/path/to/dir/with/gal-config

(Not sure on the ; as a separator, I am at work and cannot test it.)

before doing your ./configure

Or you can do it permanently by adding the above line to your .bashrc or
.profile file.
