It SHOULD NOT be in the gui, and it should not be hard coded?
So, the remaining options are 1) gconf key or 2) just don't add the
ability to have multiple STUN servers?

With 1): gconf keys have always reminded me of the worst of windows.
With 2): we end up with most peoples ekiga relying on one server always
being up.
