Thanks everybody. This IS exactly what I wanted. And I did notice that nifty little feature Craig mentions, even without having to use "&" after the command. Very sweet!

On the Mac if on the command line I type 'open .', the current directory I'm in opens up in a GUI window. Similarly 'open picture.jpg' or more generally, 'open <filename> ' will open the referenced picture or document in the GUI app of choice associated with it.

I think gnome-open does what you're after, it even gives you the prompt back
while the opened GUI app is running :)
