[gedit-list] Multiple instances with different configurations?

Hi All,

Is it possible to run multiple instances of gedit each with a different configuration, for example:
* one has the LaTex plugin enabled and one doesn't or one or
* one autosaves every 5 min. and the other every 20 min. etc?.
