Critical information here is also what protocol you are using to access
your mail - IMAP or POP (or something else)

Here's the problem:

When I move something on my computer, (evolution), it moves, online as 
well. When I delete something online, it deletes on my computer as well. 
Etc.

I used to be able to watch emails online. Delete what I didn't want. 
Download what I did want. Then delete what was left online.

The emails I did want, then remained on my computer.

Now, if I want to save an email. I HAVE to leave it online as well.

Worse, it has to remain in the same name folder...

That all sounds like correct behaviour for an IMAP connection - and how
it has behaved for many, many years.

I noticed there is no longer an option in "receiving options", for 
"leave messages on server". Is this part of the problem?

That is a POP3 option, not IMAP - with IMAP everything is on the
server, always, and what you see in Evolution mirrors what's on the
server.  With POP3 you download the mail to your local machine and by
default it is then removed from the server - unless you have set "leave
messages on server". 


I don't WANT everything I do on one or the other, mirrored to the other.

I want what is online, to be online. And what is on my computer, to be 
on my computer. And -I- want to be the one who decides what is where, 
and for how long!!!

Is there a fix for this?

It sounds like you have configured the account to use IMAP when you
really wanted POP. You can check this by going to 

 Edit -> Preferences -> (Account name) -> Edit -> Receiving E-mail

the top line of that page should say "Server Type: IMAP" (or POP)

Also POP mail is delivered into the "On This Computer" INBOX (in the
absence of any filters), IMAP mail will be in a folder tree headed with
the Account Name (usually the email address).
