I am also looking for a way to send emails using Gnome Evolution
without reveling sender's IP address (or by anonymizing it).

The bottom line though is that the MTA will add at least an IP address
when it receives an email, no matter what the MUA does (these
discussions were more about adding hostnames not IP addresses).
If you don't want your "real" IP address added, then you will probably
need to use a VPN to hide it.
