the 3.18.5 is truly old. There had been added some autoconfiguration
stuff, for which I've been promised by the author to write also a
documentation, but it didn't happen, as far as I know. The
corresponding bug report is (committed for 3.24.0):

The old way is to have preconfigured .source files and change them to
your needs (the above method works similarly, but the distribution is
more automated). Here is written where evolution stores its data:

while the most important is
  ~/.config/evolution/sources/
where the accounts store their configuration. You can configure an
Exchange account (I suppose you'll use evolution-ews) on one machine
and see what .source files had been added to that folder. Then you edit
them and store there correct user name (and other information related
to respective users) and then you'll distribute those files on the
machines. I suggest to use Offline Global Address List, if possible.

Some users have even scripts which do the configuration.

You can eventually use GNOME Online Accounts to configure EWS (Exchange
Web Services) account, if you do not want too much control on the
settings.
