Like it or not Evolution is a Gnome application and there is no such
thing as a "System Tray" in Gnome so it's not something that would
probably ever be part of the core Evolution. It's just simply not part
of the ethos of Gnome3.

Having said that there are plenty of 3rd party applications that will
do what you want - just Google for "evolution system tray".
