The policy of Arch is to go with current stable releases from upstream,
very seldom there's a delay. IIRC this is the first time it happend for
Evolution within the last three years.

You also could use ABS and fix the PKGBUILDs.

-rw-r--r-- 1 root root 2.8K Jun 10 00:05 PKGBUILD
Or if you don't want to edit a PKGBUILD, just use the PKGBUILDs from
AUR.

Don't care about the git version mentioned on the website, a git
packages usually updates master each time you build a git package.
EWS and other Evolution related stuff is also available.
