there is no error, by any means. As Pete said, all the values are the same. What you see in the email are 
two values (because the timezone used by the sender doesn't match your timezone), the first part:
Fri, 30 Jan 2015 11:58:48 +0000

On a closer look I see that all our internal mail has the +0000 zone so this seems to
be an Exchange problem indeed.

It is funny though that your email has "correct" timezone(+0100) with headers:

and Pete Biggs has timezone(+0000) with headers

What you should be looking at is the Date: header, not the date in the
Received: headers.  Milan's date is

   Date: Mon, 02 Feb 2015 08:03:49 +0100

and mine is 

   Date: Fri, 30 Jan 2015 13:27:14 +0000

Which match up with what you see.  The -0500 timezone refers to the
setting on the machine that Milan sends his mail through, not on Milan's
machine he is sending the mail from. It is coincidence that Milan's
machine is in the same timezone that you were expecting to see.
