Various repackages of Ubuntu with Gnome on top of them can give weird text color / background color combinations.

Various "tweak tools" will sometimes allow one to change things around.

elementary OS Freya (Pantheon desktop)

I'm not sure how to find out what theme I'm using, but I havn't changed any
themes from the default.
