If you run dconf-editor and go to org/gnome/evolution/... can you make
changes there?  Do they stick?  This is where settings [AFAIK]
'actually' end up; Evolution uses dconf and the settings daemon
[gsettings].

In turn dconf uses D-Bus, and you can run dbus-monitor in a terminal and
watch all the traffic on the D-Bus; this is rather educational in any
case.
