Today I needed to close and open Evolution [1] again and again, because
I often can't mark text to delete it. I'm using plain text only [2].
Since there was the switch from GNOME 2 to GNOME 3 for Linux (not on my
machine, I'm using Xfce), Evolution sometimes is completely unusable.

Not running GNOME 3 doesn't change the fact that Gtk also changed from
2 to 3, and several other dependencies. Numerous distributions package
that change poorly [or did, time moves on].

GNOME 3.8.1, and Evolution, on openSUSE 3.8.1 is extremely stable. But
have been numerous issues tracked down on other distributions that
relate to Gtk versions and themes.

If it won't became as stable as it was during the GNOME 2 times,

It is certainly *MORE* stable than it was.

It's a pity that some Linux stuff that was excellent in the past became
that bad nowadays.

Nah, it is working great for me.

$ pacman -Q evolution
evolution 3.8.3-1
