I should have mentioned the version; I know better. Sorry. You are correct, it is 3.2.3 according to Help/About.
Followed your directions for the address book. Under properties my personal address book IS checked as default.
Here are my exact steps:
Start Evolution. Click the New email button. Click the To: button. The Show Contacts window opens. The Address Book line is blank. Click the drop down and select Personal (the one that is marked as default). The below Contacts box fills with email addresses (only).
I don't know what else to add except that this Contact file was imported from Outlook, probably as a CSV file. Been a while, not sure. I'll let you know anything else you need to know.

Go to the address book view of Evolution, right-click on an address book
in the left pane, click "Properties" and set "Mark as default address
book".

I cannot reproduce that problem. I see full names here.
Which address book type is that about?
Local? Something online/remote? If so, what?
